Not sure what the ratio of black berries to wort or must would be. But I would imagine it would take a crap ton of black berries and press them. I could see it mixing well with a hefe or wheat beer. Maybe a blackberry wit.

Have they gone ripe yet? I am half tempted to pick fifty pound (rough guess as to how much 5 gallons of must it would make. And ferment it.

My advice is to buy a can of pressed, sanitized Blackberry purée from Oregan. You can buy these at any home-brewing store and their a hell of a lot easier to work with. The ratio depends on what style of beer and recepie but when I make a Blackberry Wheat, I use one can of purée to 5 gals of beer. I like subte Flavors in my fruit beers, if you want a strong flavor add another can.

Personally I find Belgian Saisons work better adding fruits as the Flavors match well. Fantome which is a popular fruit-infused Saison, uses a mixture of berries but not so much that the flavor is overwhelming. Extracts are another option that works well but you don't get the fruit aroma profile however you can use both extract and fresh fruit/purées. If you use fresh do make sure you sanitize them before adding to your primary/secondary, if you don't you could get contamination from wild yeast. What I normally do with fresh fruit is add them to the last 10mins of my boil in a cheesecloth bag then transfer them to my primary.

I made 5 Gallons of blue berry mead and I found and used Blue berry preserves. one jar per gallon. It turned out AWESOME. I think using Blackberry jam or preserves would work. The man That taught me how to make mead won a gold metal in 2010 international brewing comp.
what I use is as follows.

15 lbs honey
5 jars blueberry preserves
distilled water to fill
1 5 gram pack red star Montrachet yeast
5 teaspoons of Ghostex
2 1/2 yeast energizer

I also Have made some clove and so lemon and apple. and I have made black rice and sweet black rice sake. so If I can be of any help just yell. The bad part is I can't drink. but I love brewing.

Awesome stuff! Here are my questions.

Can I scale this one down? I would like to do 1 gallon batches to start with. If so, do I just scale it at 20% of the orginal recipe you provided?
Preserves- Are they or do they need to be seedless?
What is the meading process? IE Do I place this concoction into a 5 gallon container (I have a "better bottle", 5 gallons) and then shake it up and leave it sit?

If so, for how long does it need to sit in the primary fermenter?
Do I rack it once, twice, thrice?
How long do I let it sit in the secondary fermenter if needed (or required)?
