I'm setup to brew on my reconfigured brew-stand this weekend so I'm going to do something a little out of the ordinary. This is a recipe I've cobbled together from clone recipe as well as my personal tastes. All grain using a Decoction Mash technique and I'm debating on doing a 10 Gal batch.

Batch Size: 5.50 gal
Boil Time: 60 min
Brewhouse Efficiency: 80.00

0.50 oz Hallertauer 3.6 [3.60 %] (15 min) Hops 2.9 IBU
1 Pkgs Weihenstephan Weizen (Wyeast Labs #3068)

Beer Profile

Est Original Gravity: 1.051 SG (1.044-1.056)
Est Final Gravity: 1.012 SG (1.010-1.014)
Est Alcohol by Vol: 5.00 % (4.30-5.60)
Est Bitterness: 14.8 IBU (10.0-18.0)
Est Color: 14.4 SRM (14.0-23.0)

ETA....My efficiency should be closer to 90 so the profiles will be adjusted accordingly.

I love a good dunkel, let us know how it turns out!
If you can actually use all of the power you have, you don't have enough.

Will do, I've decided only to do 5gals since this will be my first batch with my re-config'ed stand. I did a couple of test runs with water and all worked well but sticking to a smaller batch will be easier if I encounter any problems.

I'll take photos....

I have an extract Dunklewiezen in the secondary fermenter. I used a kit from morebeer.com. I'm racking it to a keg tonight.

Did you use Carafa in your specialty grains boil? Seems most Dunkels shy away from Carafa due to the unique flavor profile.

True, a Dark Caramel or Dark Munich would be better.

Although, I may try Briess' Midnight Wheat some time.

True, a Dark Caramel or Dark Munich would be better.

Although, I may try Briess' Midnight Wheat some time.


Yes and no...Most Dunkles use Dark Munich but I do like the uniqueness of the Carafa. I may reduce the Cara and throw a little Dark Munich to balance it out, I also plan to ferment on the cooler side so the spiciness will blend the Carafa Flavors a bit.

So I picked up everything at the LBS today. They didn't have any Carawheat so I had to opt for 40L crystal. I did revise the Carafa to .5 ounce and added .5lbs of dark wheat to balance. This will through my SRM off but I'm not looking to enter this in a competition.
