I'm talking true, no bean, chili. I'm looking for a good Keto-friendly recipe with a good thickener besides masa, if possible.

Do it right, and you need no thickener. I use only soaked chiles, meat, water, onions, garlic, salt, and Mexi oregano.

I use the Alton Brown Pressure Cooker Chili recipie and modify it.

Make my own chili powder (of course).
2lb beef
1lb pork

Dump the beer for beef broth;
dump the salsa for a can of fire roasted tomatoes (still some carbs but no added sugars);
dump the tomato paste;
dump the tortilla chips for almond flour (either 1/2C or 1C - I have to check my notes) as a thickening agent.

I use an entire can of chipotles and the adobo sauce.

Turns out pretty good and nearly indistinguishable from the original.
