I'm making a roast strip loin just for sammiches. When it comes out of the oven, does it need to rest at room temp or can I just set it on a plate and put it in the fridge? Reason I ask is, it's easier to slice when it's cold.

Let it rest for a bit.
Putting hot food right into the fridge raises the fridge temp unnecessarily and can put other foods at danger.

I let it rest on the counter, whole house smelled delicious. The sammiches were great too!
