I recently purchased a Larue Tactical Barrel and in the box they sent me this stuff called "Dillo Dust."  I threw it up in my cabinet and forget about it.

Today I went to my local butcher and picked up a flat iron steak that I planned on grilling and cutting thin to make some tasty steak sandwiches.  When I went to season it, I couldn't find anything on my spice rack that I wanted to season it with.  The Dillo Dust jumped out at me so I generously seasoned the steak with it and rubbed it in.  Grilled that sucker for about 4 min on each side and pulled it off the grill to rest.  I sliced it up thin, piled on on some warmed ciabatta bread with some garlic and herb Monterey Jack cheese with some horseradish sauce.

Damn it was good.  The Dillo Dust was flavorful and spicy without being hot.  

I may find myself buying more Larue stuff just to get some more Dillo Dust.

The ingredients are on the bottle.  It isn't hard to figure out the quantities of each and make you own.  I make it a quart at a time.

I'll second pork chops / loins.  Mostly what I use it on.



I did a boston butt this past sunday and ran out of my rub mixture...  So I added dillo dust. Seemed to come out well, a little sweeter then I liked, but I balanced it with a spicier BBQ sauce.

It's very good on fish fillets, either baked or sautéed in a little olive oil.



Not bad on popcorn either.

Rubbed down a bunch of thighs a couple weeks ago and threw them on the smoker.  Came out real good

Too sweet for me to put on beef.  Chicken and pork, though

that was my impression when I tasted some of it as well.  someone sent me some of it as a gift and I tasted it and tossed it.  Never cooked with it.

Ingredients: Sugar, Salt, Paprika, Chili Pepper, Celery, Garlic, Comino.
