I almost bought a paella pan, but for the once a year I might use it, I'd rather not get a specialized bit of equipment for it.

Reading over at Chowhounds and such, it seems like it would work, but I'm wondering if anyone here tried it? Any gotchas/tips if you did?

Parents brought paella pans from Spain, so never tried it.

Seems plausible though, just get the pan good and hot over the (wood) fire before you add your rice...

Yes.

Make sure the skillet is good and hot before you add anything. Other than that, no special considerations.

Paella pans are cheap enough and really add to the presentation.

I got the 17 inch pan from here. Fair warning though, it makes a shit ton of left overs
