so wifey loves this (she has made for 18 years+), I pulled onions and cucumbers today and want to surprise her tomorrow at work/lunch

I know to slice and cube cucumbers and slice onions, is the white vinegar 50/50?

I know this sounds simple...dont want to screw it up....

about 50/50 water vinigar... To taste i add a bit more vinigar



S&P to taste




A little Dill if you have any




A bit of sugar or other sweetener to take some of the tang out. I use splenda..




Longer it sits the better

Parents used to make this, Id forgotten all about it. You might be able to do some interesting things with different types or combinations of vinegars. Balsamic, rice wine vinegar, white and red wine vinegars, etc. Rice wine and a bit of soy sauce might be interesting... or possibly terrible.

We do the same thing every year.


We do equal parts by volume water/vinegar/sugar...we like it sweet and we usually eat them as desert.  The onions are the best part IMO.

Like this. My German born mom always added just a touch of oil so the vinegar, water and oil formed a sort of dressing. Best the next day.

Second day add some Sweet 100 or other small whole tomatoes.

A nice side with a chicken fried steak and mashed potatoes.

Here's mine:

Roughly 1 cup miracle whip

3 cap fulls of apple cider vinegar

salt

pepper

salad supreme seasoning

about 3 teaspoons of sugar .( More or less depending on how sweet you want it.)

Shake all that up in a mason jar.

Then cut cucumbers, onions, cherry tomatoes , green onions.

Mix in a bowl, then refrigerate for at least an hour. Always better the next day .

I use sweet rice vinegar, adding a bit of black pepper and some red flake peppers too.





Toss in a teeny bit of sesame oil if you have that too.  (Like, three drops at most, it has strong flavor.)


 



You can also slice in about half an avocado and let it sit over night.  That fills the role of oil.

We also like to add cherry tomatoes and mozzarella balls or cubes (I like bigger chunks because my stomach likes moar food less acid) we often only do cheese and tomatoes

A friend from the Philipines makes the onions and cukes with a soy sauce, vinegar, and water solution.  They are awesome after soaking for a couple hours.  I don't think they taste as good with an overnight soak.

I use apple cider vinegar 50/50 with water, salt and pepper, and let it marinate for a day.

This guy is on target. I don't put in pepper though. Good with just a little bit of sugar or a good amount (obviously more like a sweet snack/desert)
