Pales in comparison to the chicken breasts and sausage I cooked today.  First cook on my Ole Smokey 22", came out great.

Another good option is yogurt pops (especially if you buy low-sugar or Greek yogurt).

I used to love doing big banquets, but I think the biggest I ever did was 800 people. That's pretty amazing.



I hope your feed for 1200 was done buffet style. I can't imagine the logistics of plating and delivering 1200 meals.

My coworker bought Chestnut flour from Germany for some reason, and gave me a half kilo of it because she said she was going to throw it away otherwise, and she knows I like to cook.





WTF do you make with this?  I know the Germans like cookies made out of ground nuts but they're disgusting.  If you've ever had marzipan or that other cookie, I forget its name.  Somethig like knesslbach, PFEFFERNUSSEN!







I found that the Italians make crepes out of this crap, so I am trying it today:

Big skillet of eggs, bacon, potatoes, and cheese for breakfasts this week.

Country style ribs with a dry rub, and corn on the cob, on the grill.

Collard greens sauteed with bacon, onion, and garlic.

Homemade strawberry rhubarb crisp, with homemade vanilla ice cream.

Yesterday:

Baked a couple of loaves of Amish White Bread. While they were cooling down, put together some scratch made tomato soup.
Made the wife grilled cheese for dinner, toasted in bacon grease, along with the soup. Turned out fairly well for my first attempt
at traditional bread instead of flat breads or soda bread.

Creole Potato Salad

3 pounds new potatoes, boiled until tender (skin on)
4 stalks celery, chopped
3 hard boiled eggs, coarsely chopped
3/4 cup chopped red onion
3/4 cup chopped dill pickles (I've used spicy or half dill and half spicy)
1 cup mayonnaise (I use Dukes)
1/2 cup spicy mustard (I like Emerils)
Creole seasoning

When potatoes are slightly cool crush between fingers.  Place in a bowl with eggs, pickles,
celery, onion and season with creole seasoning.  Combine mayonnaise and mustard and pour over potato mixture.  Toss gently.

I suggest making this AT LEAST 24 hours in advance.  After leaving it overnight, taste the next day and season more as necessary.  I generally add just a dash of red pepper (ground) to add some heat if it doesn't have any heat to it.

Yesterday I smoked some baby backs for 4 hours, 3 at 225 and the last hour in aluminum at 275. They picked up perfect color and were like eating candy.  

I used a pound of Costco pasta and mixed in three bags of Velveeta cheese and made mac-n-cheese to go with.  

Excellent Sunday dinner!!!

More like 8 years. I used to eat steak purchased by my father and cooked on mosquite charcoal all the time growing up. Then I went to college with no grill and no money.

It's basically what Latino cuisine calls piccadillo.  Seasoned ground beef you serve over rice.

Meal prep Sundays.

Bolognese, Chicken salad croissants, Ham and cheese croissants, Lasagna, salad dressing, marinated grilled chicken, cubed with sauce on the side, hard boiled eggs, and brined another batch of chicken for tomorrow's prep. Tapped out before making meatloaf. Not sure that's what I want to do with leftovers, and there is always tomorrow...

I feel like this was a light Sunday compared to most.

First time cooking it, turned out well, but I added a second can of coconut milk. VERY rich when cooked down. I think 1 can, as the video states, is the way to go.

Substituted lime zest for lime leaves, and a few squirts of worcestershire sauce and lime juice for the tamarind. Just tossed in the ground spices I had and made substitutes for the others. Only used the shallots and ginger.  

Also, I only stirred it about every half hour, until I could see the mix starting to stick a little to the bottom. Not a constant stir type deal, as it still had enough liquid for most of the cooking time.  

9/10 would eat again.
