Brisket, ribs, chicken and hot links. All slowly cooking. Macaroni salad, hard boiled eggs, Homemade spicy sweet pork and beans, jalapino scalloped potatoes, and scratch banana cream pudding.

Just made subs to put in the oven.

Salami, ham, pepper jack cheese, provolone cheese , cheddar cheese, banana peppers and some pizza sauce.

wrap in aluminum foil, 20 minutes @ 350 in the oven. Pretty good.

Bolognese, jalapino poppers, Chocolate pudding from scratch, and tuna salad.

I know, weird. kids are all out of school, so loading up the frige with easy food/snack options.

Sure!  Its a work in progress.  The type of salsa you use makes a big difference.  Clint's made a much tastier rice dish than mild Pace did.  

1 tbsp butter
2 cups rice
1 clove garlic, crushed (or 1/4 tsp garlic powder)
1 tsp chili powder
1 tsp cumin
1/2 tsp salt
2 1/4 cups of chicken stock or water
1/2 cup salsa

In a medium saucepan, melt butter.  Add rice and brown for a few minutes.  Add remaining ingredients and return to a boil.  Boil until most of the liquid is gone, then cover and lower heat and steam for 15 minutes.  Fluff rice and serve.

Monday was chicken fettuccini Alfredo. Tuesday was linguini with a marinara type sausage gravy.  I will probably smoke a chicken tonight.

I made @ratsass famous pork tenderloin recipe and brought it into work for a pot luck.  

I made 4 tenderloins and used about 3.5 of them.  Kept ugly ends for my work lunches. 

It was informed the pan was gone in 30 minutes.

Moussaka burgers

Burger:
Salt, pepper, thyme, cavender's, and tomato paste mixture (1 small can per 3lbs of beef) all mixed

Tomato paste mixture:
In sauce pan, small amount of olive oil, ground cinnamon and clove. Cook for a few minutes and let it completely cool.

Veggies: Eggplant cut into thin rounds, zucchini sliced thin (lengthwise), onion cut into rounds. Seasoned with cavenders, add olive oil (and thyme if you want to be thorough)

Bechamel: Basic blonde roux, add a little cinnamon and/or nutmeg and pepper. Add milk in like 10 steps, waiting for it to be absorbed before adding more. Dump in parmesan cheese and stir.
Taste and season. It should be thick enough to be a spread basically.

Grill all the veggies first then grill burgers, unless you have a grill that can fit everything

Assembled thusly: bottom bun, eggplant, zucchini folded on itself like veggie bacon, burger, onion, good amount of bechamel, top bun

Bbq some giant bobe in newyorks with sweet corn on cobb and scalloped taters.

Had cherry 7up with dinner, dont drink.

Got a new oven put in today, Wife was giddy to bake snickerdoodles to take to the shut ins at church. Other than some left over reverse seared ribeye from the other night, I don't think I had anything to eat today but fruit, yogurt and cheerios.

I made a bacon-weave roll stuffed with ground chicken, white cheddar, and whole-grain mustard.  It was delicious.

I've always thought the bacon weave stuff looked fun but would probably be greasy and better looking than tasting...I was wrong.

I did cedar plank grilled salmon and shrimp. Half of the shrimp were done with a butter garlic sauce, and the other half were done with cilantro lime sauce.

Did corn, asparagus, and sweet potatoes on the side.
