I am not as snobbish about this as some, but you are basically steaming the chicken. I'm not opposed to the oven cooking bags either, but the chicken is going to actually BROWN a little in that bag. Not so in a crock pot.
I've done whole chicken in a crock pot by putting the veggies in the bottom and setting the chicken in on top of it and letting it set there til the chicken falls off the bone. Was it decent food? Yes. Would I do it now that I'm a better cook and know how easy the other ways are? Nope.
The TROUBLE is this--the beauty of a whole chicken is that nice crispy brown skin you get with high-heat roasting (which only takes a little over an hour in a hot oven, and is the easiest thing in the world to do).
So you're going to end up with a pale, fatty stew. Not goop, but nothing like the glory that a whole chicken can be.
If you're going to do chicken in a crock pot, skinless breasts/parts make more sense.
