Ok, so the title says all.

What is your favorite hot sauce, and most importantly why?

Mine is, Hot Lick's XXX.

Why? Because it really heats things up. You don't need to use much at all, about 5-7 drops gets it going with strong heat.
You can use it in a salsa to get it really hot and still retain flavor. Great to cook with too.

I would rate this about 100 X as hot as Tapatio.

eatcha eyes out...too hot for me.

I made a decent "gold" sauce the other night.... mustard, honey, cayenne peeper hot sauce and a pinch of pepper.

Nothing special.
I'm not big on the "super hot" sauces, these work good for me.

Sriracha is the best I've tried so far, and I've tried just about all the common ones. Perfect amount of heat. Great flavor that works well on anything: pizza, Mexican food (even though it's Asian), eggs, mixed with ketchup for burgers, fries, and hot dogs.

I really like the various flavors of Cholula.  It's not very hot, I could put it in a glass and drink it, but it adds a little spice and flavor without the vinegar of Tabasco.

IMHO, sauces that are all heat and no flavor defeat the purpose; I don't even consider those a sauce for culinary purposes. They are a joke/fun/gag/raw ingredient (for bumping up the heat and nothing else).

That being said, after years of hearing of this "Sriracha stuff" I finally tried it about a year ago. To me, it has the perfect amount of heat, pepper flavor, sweet, & vinegar that it works VERY well. There are a few things that it's a bit too hot or too sour on, but for those things I just use small amounts.

This, except I would argue to point about it being not very hot. One of the green ones is delicious. but way hotter than the others.

Been using this a lot lately. Had a nice kick with a Smokey garlicky taste.

I make my own. Simmer habaneros in vinegar then puree, add salt, and funnel into sterilized bottles.

Blair makes one called Zakk Wylde's Berserker Sonic Brew. Out of the Berserker line, I like it the best. It is a green jalapeno based sauce. Not awful hot but a very good flavor.

Thanks for the info!

I didn't know Blair's had other sauces like that. I am very familiar with the Blair "death" sauces.  
Sudden Death is about as hot as I can go without some damage to my taste buds. After that, it's no fun anymore.

What's funny is that even though Sriracha was created and is produced by Asians, it's made out of red jalapeno peppers (native to Mexico) in California!!

If you have Netflix, search for Sriracha and watch the documentary on the sauce and it's history.  It got me back into eating it  after over 20 years of not touching it.

Actually, one of my tricks is I have Dave's Insanity Sauce and use it to "buck up" other hot sauces.

Tabasco and just pick what flavor you want.

They go from mild to hotter. Just picked up some of their Sriracha sauce and I like it a lot. A tad bit more of a smokey flavor then the original one from Cali. And I really love the Tabasco soy sauce but that one is hard to find in stores even around here.

Speaking of hot sauces, I just whipped up another bottle of "Bottle Apocalypse" (crushed Scotch Bonnet peppers in vinegar). Even wearing gloves, using a half a cup of Dawn dish detergent to clean up, and use a near-sterile technique I still have capsaicin burns on my hands. No fapping tonight!

I love that brand. I tend to go with the green habanero version. I usually put it on eggs.



I like cock sauce for ramen, texas pete for wings and Famous Dave's devils spit for BBQ sauce.

Thread title is misleading. Are we talking about pepper sauce or hot sauce? Because all of that louisiana/franks/texas pete//crystal shit is pepper sauce, not hot sauce.
