The supermarket had a good selection of "variety hot peppers" for $1.99/lb. and among them were red, orange, and chocolate Habaneros.

Washed the chiles, pulled off the stems, and then cut each chile in half lengthwise. Poked them into a bottle and filled it with hot vinegar.

In about a week I'll have...NUCLEAR VINEGAR. MUHUHUHUHAHAHAHAHAHA!!!

ETA: Week, my ass. After just shy of 24 hours this stuff is wicked hot.  Just one drop.....

Why vinegar? I like Tabasco but there aren't many dishes where I want to add straight vinegar along with heat.

In any case, good work finding chocolate habs for $2/lb, that's a smoking deal.

I do it with white balsamic vinegar. Sweet and hot.

I use homemade pepper vinegar when I make turnip greens.
Or sandwiches.

Peppers in vinegar aka "pepper sauce" or "peppa sauce" is a Southern staple used on vegetables (collards, kale, etc.) or on BBQ or in soups/stews.

Nice.  A drop or two also makes cole slaw much better.  No idea why, nor do I care.
