the ground elk is the easier species to hunt as opposed to the sky elk which are rare.....

looks good! I have a "ground elk" farm here in Indiana. They are a major pain to raise, I can only imagine the difficulty in raising a herd of sky elk.

pretty good!  texture degrades quickly due to it being ground meat...but flavoring is best yet.  It was pretty bland after dehydrating so I threw some more marinade on it with some sweet and heat flavor for a second run on the dehydrator...thus the glossy look on some pieces.
