I've got at least two dozen tubes of ground elk from this season to cook this year. What are some of your recipes?

I say make some sausage. Just got done making 40lbs of it yesterday. It was all pork though. As far as recipes go this is one of the best sources for sausage  I have found.  http://lpoli.50webs.com/Sausage%20recipes.htm
You could use elk in any of them you just have to add some fat to it so it isn't dry.

What's the fat content if any?

Meatballs, chili, meat sauce, burgers, pound out to make a kind of steak shaped piece to cover in gravy, meatloaf, Mexican like tacos, burritos, nachos, roll with feta and spinach and kebab them and serve with yogurt and flatbread.

Shall I go on?
