I always wipe things down after frying, but it is getting a little gummy after all these years.
Is there a spray on that is not harsh like Easy Off?

Stock pic, mines a billion year old hand me down.
Windex, simple green, dawn mixed with water in  spray bottle...

Not that hard.

ETA- cleaning weekly or after cooking instead of waiting years helps too.

Windex or a variant. The ammonia cuts grease like a champ. Used it in commercial restaurants forever. Cleans and shines.

Once a year I have to go scorched earth on my range hood.  Mineral spirits cuts that greasy, thick, nasty stuff with very little effort.  Be aware of flammability precautions.

4" spackle knife

I use Spray 9 cleaner but have also used vinegar and water with a few drops of dawn.

Soft Scrub + elbow grease.

Wipe more often, change your technique as to not splatter so much. When I do things that make splatter, I am wiping then and there not 3 hours from when I cook.

Cover stuff with aluminum foil if it's a persistent problem.

What works really good cleaning is my wife.  I cook, she cleans, works out great for both of us.
