Get a Kamado-type grill and grill 'em hot and hard—500 degrees or so, indirect. They'll be 87x better than fried.

I've always just used vegetable or corn oil. I wouldn't think it matters too much, as long as you get it hot enough. Most wings don't really have what could be considered a delicate flavor.

doesnt matter, the chicken fat will cook out in the 1st batch and flavour the oil.

Peanut.

My best wings ever were cooked in oil previously used to fry two turkeys.  Watching foodtv I learned oil has a bell shaped flavor curve in its life and it needs to fry a few things first before you get best results.

Grilled is THE way to go. Toss thebwings withba little olive oil and cover wings in a rub of salt, pepper, cayenne, paprika, garlic powder and maybe some rosemary and thyme.

Toss them on a hot grill with indirect heat. Into about 450 degrees. Some pecan wood chips for a little smoke flavor.  Cookem till they are good and dark and crispy skinned.

I like to toss them in BBQ sauce at this point. A bufallo style sauce is great too.

Fried wings are plain boring by comparison.

I use rendered duck fat for most of my deep frying. It's expensive and kind of a pain in the ass but if I'm having a cheat meal I make it count. Duck fat fried wings with chipotle maple glaze and poutine made with bacon gravy and fresh cheese curds.

Not my experience at all. Crank up the heat on the grill, and the wings SNAP!!! when you bend the joints, and juice explodes from the inside. This applies only to whole wings, BTW. If you dismember the wings, there is no hope for you, and I can see why you feel the need to fry them.

 



Pro-tip before grilling: poke 'em with a fondue fork all over to let the grease and steam out fir crackling'-crisp skin.




I'll be grilling up a batch tonight.
