I have to say that there's something vaguely immoral about turning the wonderous thing we call trout into the home canning equivalent of StarKist.  

Smoke it and freeze it?

Guy that goes to my church wants to can the trout. Something different for food storage.

I've had canned trout before that was actually very good. The person that made it took whole, gutted brook trout and sugar-smoked them. Then packed them into the jar as tight as possible, filled the jar with a mix of 50/50 maple syrup and olive oil before pressure canning. It was served on rye crackers with trout caviar, creme fraiche and chives.
