Roast bell peppers. I use a wind resistant lighter to cook the whites of sunny-side up eggs.

If I were to use a torch in the kitchen, lets' say a lemon meringue pie or something of that nature, I'd grab a 1# propane bottle with a flame spreader.

When roasting peppers, I use the propane grill on the back deck it takes a little longer and you have to turn them a few times, but I don't have to play the smoke alarm game.

As to eggs, a non stick pan at a setting a little less than nuclear sets the whites fine for me.

I'm not cool enough to use a torch in the kitchen.  Also I've never had a cooking need that wouldn't be solved by something other than a torch.

Mapp gas torch resides in the kitchen.  I use it on jalapenos, anaheims, and to start off the cold smoke generator on the pellet grill.

Roasting peppers is easiest over a gas burner.  Indoors or outside on a grill.

For your eggs; try putting a lid on your skillet after adding a couple tablespoons of water to steam the tops of the eggs.

1) Lighting charcoal for my wife's tandoor.  (Yes, my wife has a tandoor, because she's awesome.)
2) Carmelizing brown sugar on pineapple.
3) Creme brulee.

I use mine for the occasional crack pipe when I need to stay up all night prepping for large holiday spreads...

Seriously though, creme brulee and carmelizing sugar over oatmeal.
