looking around the cabelas website i have a bit of trouble answering this question, im looking to get these Cabela's Stalker Extreme Carbon Arrows – Blazer Vanes

do i go with the smaller .300 or the mid .320 inner for the whisker biscuit?

Doesn't matter. The whisker biscuit will handle any diameter arrow because the "whiskers" bend and are flexible.

Whats more important is to make sure to match your arrow weight to your bow poundage and draw length. That info is on the back of the arrow box.
Pain or damage don't end the world. Or despair, or fucking beatings. The world ends when you're dead. Until then, you got more punishment in store. Stand it like a man... and give some back.

Most carbon arrows are 9/32" diameter, which is 0.28". The smaller hole will work. But the midsize will work as well.

The medium whisker biscuit is best for most carbon shafts. The very small carbon shafts that have the inserts glued on the outside of the shafts would be for the small biscuit. The large biscuit is for the larger aluminum shafts like 2213 2412 etc.
