My Howard Leight Impact Sport muffs have an audio-in jack.  That got me to thinking it would be really nice to be able to run a 2-way radio into it so I could easily communicate to coyote hunting partners (when to get up, if you have one coming in, one's hung up, etc.)

Has anyone found a way to do it discretely for hunting applications?

Well, audio in is easy.

The Mike will be the problem.

You should research three wire surveillance kits, and find one that you can unplug the earpiece. That's where I'd start.

Also, ask in the ham forum, maybe it's already been solved?
