Where I live, it would be whitetail. Elk hunting sounds really fun, but we don't have a large enough population of them in Wisconsin to be hunted. Black bear is good but we have to wait 6-8 years to get a kill permit.

That's about all I hunt now. Elk have the best flavor & provide the best hunting experience, in my opinion. Less than a month until I'll be up there again. Elk season is why I work the rest of the year (well, that and to provide for my family, but that's just a bonus)

Elk is a great hunt, and some of the best meat to be had. If I knew I could only hunt one more time in my life, I would head to Colorado or Utah and hunt elk.

Quail are quite tasty, and pointing dogs are some of the most fun you can have with your clothes on. :D If I could hunt every day for the rest of my life, I would hunt quail.

Rocky Mountain bighorn sheep, closely followed by elk.
Both are exciting to hunt, offer splendid "trophy" qualities, wild, scenic country AND lots of great meat.

Bears? No horns or antlers. And the meat isn't always even edible, let alone good. Sorry.
Moose? Cool, but not always terribly challenging in terms of pure elusiveness.
Caribou? Also cool, but just not in the same league as elk.
Deer? Love'em, but no.

I'd really love to hunt those giant Marco Polo sheep or Altai Argali sheep in Mongolia or wherever one tends to find them these days...but that just ain't gonna happen.
Same for markhor.

Tahr or chamois or red stag in New Zealand? I'm listening...

African Cape buffalo? When do we leave?

Of course Elk as I'm in CO.

but I do love some Miinnsota whitetails too! They are much better than the mulies here in CO.
