I've decided to take up another hobby and have two of these smokers now.  I love cured and cold smoked salmon.
I'm going to cure and smoke some pork belly next. I've dabbled with it in the past, but never really had the time to get into it very far. Making a really good fermented and air dried sausage (salami) is high on the list. Difficult to get right too. |

Looks great! The best smoked salmon Ive had was from some Natives that pulled'em out of the Puget Sound and alder wood smoked them in 55 gal drums.
I may raise and smoke trout very soon. Isn't charcute technically smoked pork? |
