So I am not sure how badly I messed up. I just got a pressure canner and went to use it last night. I picked up some pot roast to can. I followed all of the instructions, and then it happened. About ten minutes before the time was up I fell asleep. So rather than cooking for 90 minutes it cooked for 120 minutes ( that's the last time I do this that late ). The lids are holding a seal so far but I have not removed the bands yet.
Will this meat still be fine, or did I waste a bunch of good pot roast?

Extra tender, but just fine.

That's not too bad... someone ask my wife how long it takes to brown a package of deer burger .......

LMAO! Well Here is how NOT to burn a skillet of deer burger....DO NOT under any circumstance put some on stove set on low and then go outside with your son to wait for the bus (first day to ride bus) (thinkin you will only be out there for 15 min) and then forget about the meat cause you are waiting on a bus that forgets to pick your son up...and after 45 min of waiting you have to drive said youngster to school. If you do that you will have your husband walking outside carrying a severely burned up pound of deer meat and a house that wreeks!!

Good I was worried that I would be out all of that meat. Not that it was that much, but I'm pretty poor.

The only real danger is running it out of water. Extra long cooking times, as stated, will just make it more tender.

Yeah it got low on water but still had enough.
