A couple weeks ago I opened up and used a can of evaporated milk when making some mac and cheese. It looked a little darker than I thought it should so I tasted it. Tasted OK and I used it. Later I got to thinking about the last time I had used evaporated milk and I checked the other cans that I had. Use by date was April of 2004. So, ten year old evaporated milk, although slightly darker color tasted OK and I'm still kicking.

As a child, my Mother told me that happiness was the key to life. At school they asked me what I wanted to be when I grew up. I wrote down "happy". They told me I didn't understand the assignment; I told them they didn't understand life.

Still tastes good, maybe a bit darker than when first canned but definately worth putting on the table... Nick
