Well I am up at my buddies house and we are making Bonyacalda for dinner tonight and I thought I would give you guys a write up on how to do it. Every family has there own way of doing it so if you make it a differnt way please chime in for others so they have options.
One Deep electic pan ––you know the kind 12x18 inches and about 3inch deep, I just cant think of the name
Olive Oil ( You will need enough to fill up half the pan)
Fresh Garlic ( a shit load guys, we just put in a whole blender full
..your goal is to cover the bottom of the pan and then some)
Butter ( 2-4 sticks depending on size of pan)
Anchovies ( 1-6 cans, this is a taste thing and one is mandatory after that its personal preferance in my experiance. I personaly use two-four.)
Fresh French Bread- ( Homemade is of course the best, bakerys work as well with store bought coming in last.)
Cut up Meat and vegis of your choosing. Typicaly Steak, chicken,shrimp, brocoli and other green stuff.
This is typicly a all day event since you want to let the Garlic, anchovies and olive oil season in the pan while stirring every once in awhile. The main thing here is you DO NOT WANT TO BURN THE GARLIC OR IT WILL TASTE LIKE SHIT! So I advise you start off on the warm setting and slowly work up to a light simmer( not boil ). Use your best judgment on this one guys, remember not to burn the garlic.
So about a half hour before you want to eat you throw in the butter and stir it in. By this time you should have figured out your pan and know about how high you can turn it up where it wont boil or burn the garlic ( but still hot enough to cook).
Throw in some meat and vegies and watch them slowly cook
, when there done to your likeing take them out and put the garlic soaked goodness on a thick slice of french bread. Some people eat the french bread with the cooked item but I pesonaly use the bread like a plate and when the bread is about to fall apart from all the garlic olive oil I eat it
This is a eat while you cook deal where you and your friends/family all just start throwing shit in and eat as you Bullshit and drink.
Disclaimer- YOU will smell like garlic for a few days, this goes for your house as well.
