The Sausage Shop on Prince, near Fairview did game processing, I think they still do. They were smoking a javelina for a customer when I went in once and I have seen many elk and deer in their cooler.

I thought it smelled pretty good. They do stink on the hoof and after the kill, but I'll happily take any and all javelina from any of you that don't know how to leave the musk gland alone, if you let me skin, clean, COOL PROPERLY, and butcher 'em. I've never had a bad tasting one. Full pit roast or tamales.

I've heard and had lots of bad experiences with Willcox Meat, Sausage House, and Dickman's.
There is a guy that works at the U of A meat lab who does wild game on the side. He has a freezer at his house and is totally professional. I highly recommend that you call Tom at 520-909-0744.

I went with the Wilcox Packing House. Thanks for all the advice.
