I have an Mp5-40 w/ a sef Clipped and pinned lower. Can I buy a Clipped and Pinned Ambi Housing and selector (0,1,F) and it operate correctly?

No.
to clarify - the selector holes on a sef vs. ambi pack will be different. So, ambi grips will require an ambi pack (even the 0,1).
Not only will the pack not work, but don't forget about the BHO relief cut on the left.
ETA: If you're thinking about an ambi pack, handle one at least before buying. I didn't find it as cool as I thought it would be as the right sided selector dug into my hand (I grip really high).
