 Anyone pit cooked a hog onsite?

So my buddies and I are planning a weekend long Hog hunt to "Attempt to eradicate" the hogs from his uncles farm. We were hoping to shoot

a piglet or a sow on Friday and cook it in a pit for Saturday night. Anyone here done it? What's the best way? Any good recipe's?

Hi, haven't tried the " Pig " in the ground " YET "..

Did a " BBQ Suckling Pig "..on a " BIG GREEN EGG "



I would " Inject " a liquid marinade under the skin, on the next one !

You really should tryout a few @ home, before doing any in the " Field ".. No need for any undercooked meat , & worries of " wild game, with internal Parasites " ??

I highly recommend .. a digital Thermometer , with an extra long stainless steel cable, to make sure the meat was cooked properly !

Was not right that night but, did do it for thanksgiving. No reason You couldn't crank up the fire, season and let it roll...

Start in the morning by digging a big hole, fill it with wood, light it on fire, let it burn until it burns out.

In the mean time, get a hog, rub all kinds of seasoning and shit on it then wrap it up in banana leaves and tie it up.

Throw it on top of the coals and then cover it up with dirt. Dig it up later that evening and eat it.

we've done it.

we skinned the pig out, injected it with some Cajun Injector, rubbed it down with various seasonings (Tony Chachere's, pork rub, etc.) then slather it with bbq sauce. Wrap it in aluminum foil and put it on the pit. When it's done we threw it on a big table, dropped knives all around the perimeter and dug in. oh, and I forgot, lots of beer drinking goes well with every step :D

I looked when I posted that and I couldn't find one. I tried to find some others cause I know I took some but I have no idea where they are. If they turn up I'll post them.
