Anybody have any good recipes for birds they'd like to share?

Ducks, geese, doves, whatever, anything you like would be great.

Thanks

I have a couple pretty good ones for duck/geese.

Mix a small can of jalapenos (with juice) into a block or two of softened cream cheese. Cut a pocket in the duck/goose breast and stuff with the cream cheese mixture. Season duck/goose breast with whatever you like, then wrap them in bacon and grill until medium rare. Very good.

Another one. Dice up a package of bacon and cook (kind of like bacon bits). Dice up your duck/goose and cook in the bacon grease. Mix the bacon and duck/goose into 2 blocks of softened cream cheese. Add some diced garlic and chives or green onions and mix all together. This makes a pretty damn good spread or dip for crackers. This is a regular in the blind for us!

If you checkout www.flocknockers.com, they have a recipe thread that has tons of really good recipes (i'm pretty sure I have tried most of them!)

if this thread heats up, it should be a sticky. In fact, each hunting sub forum should have their own recipe sticky

take your choice of stuffing and add raisins & apples to it, then stuff the ducks with it and place in roasting pan then surround the ducks with more stuffing and put in oven till cooked through and tender. As for pheasant take and put in roasting pan and smother with cream of mushroom soup and bake serve with cranberry sauce and some of the soup that in the roaster over the cut meat to taste and a side of stuffing ro what other side dish you like

Good for Goose or pheasant:

Crockpot or slowcooker

Goose breast or whole pheasant placed in the cooker with bacon strips on top, and some chopped bacon, onions, mushrooms, potatoes.

A couple cans of cream of mushroom soup, along with salt and pepper.

Cook slowly and serve on rolls.
