So, our food co-op has a smoking deal on frozen green beans. Has anyone ever tried canning frozen beans before?

I have never tried it but I expect they would be mush after canning.

I would consider dehydrating them before I would can them. Picture green slime

No room in the freezer?

I prefer frozen to canned green beans anyway. I still can some for longer term, but the majority gets blanched and frozen.

Exactly, Fresh green beans are also very good pickled for a cold weather treat.

I'm going to add to this green bean thread instead of starting a new one.

My wife wants me to ask you guys a question. I swear to God she said to me the other day, "ask your buds on Arf what to do".

How do you keep home canned green beans from getting softer and lest crisp than store canned beans? our canned green beans are really mushy and she hopes there is a solution.

kinda what I was thinking too. Do you have access to a dehydrator? my buddy dehydrates frozen veggies with alot of success.

Hey Brother,
Do you hot or cold pack when canning? I always cold pack mine and I pick and can the same day

Brother Rustee, we cold pack, but do not can on the same day. we can a day or two later.

that might be the solution.
