 i have a roll of sausage and its swelling

roll of jimmy dean maple sausage, expires feb 6th 2011, it feels like it has expanded in size by 20-25%

is that normal and is it still safe to eat ? i have a concern that it may bust the seams of the plastic wrapper.

and its been sitting in the lower half of my refrigerator.

It's bad had the same thing happen to me this past summer.......the date is a use by/ or freeze by date. Now I always freeze it and defrost it before eating.

Yep.

There's nothing in sausage that would make it "swell" except badness.

you could always gather the whole family around and take turns poking it with a stick. Sort of snausage roulette. eventually someones going to get it.

I worked at a grocery store as an undergrad. We would accept returns of expired food if the customer alleged that it was expired when we sold it to them - no receipt required. It was basically a good will thing and I'm sure it was taken advantage of by many.
