 Have you grilled catfish? Smoked it? any tips welcome

Going to catch some big cats out of my pond and use the smoker - Never done that before. Any temperature/time suggestions?

I do it often.
It's really good if they are Blue Cats or Flatheads. Trim, trim and then trim some more. Leave NO fat or red meat on the fillet and they will be very good.

Channel cat....not so much.

well we found a very nice grill in a second hand store and discovered it was a 2k grill /smoker - so we are trying to cook everything on it, to not heat up the house. The warm oven keeps the kitchen warm until the next day.

Smoked catfish is awesome, so is smoked striper. We usually put some rubs on it and then put it in the smoker for a while until it's done. It doesn't take long, just check it often. Definitely don't want to over cook it.

One of the local restaurants has lemon pepper grilled catfish. So good it'd make a rabbit hug a hound.

blackened is acceptable, when redfish is unavailable and you don't feel like heating up the grease

Don't blame you, if it cant go on the grill from Mid-June through mid Sept, we try not to make it...

I'm not the best cook, but when I cornmeal the hell out of them and pan-fry them in grease, they come out awesome.

A local member's club here stocks nice blue cats,, and I caught a half dozen 2 pounders. They turned out really good.

I've seasoned & added some lemon, wrapped in foil and placed on the grill. Farm raised catfish is very good.

We cook it on the grill all the time. Like this.

I use some flattened expanded metal that I got from work.
I spray the expanded metal with pam.
Rinse the fillets in water and pat dry.
Sprinkle lightly with barbeque rub.
Place 2nd piece of flattened expanded metal on top of fillets and secure with wire.
Place on grill for 5 minutes
Turn over and cook for 3 minutes.
Remove from grill and unwire expanded metal.
Remove fillets using a spatula
Profit enjoy

Smoked catfish is great.

Fillet leaving the skin on one side (skin side down on the grate)
Soak over night in fridg in a salt brine.
Put whatever rub you like on the fillets
Smoke at a low temp for three hours. enjoy

I've actually done it. Catfish is best fried. I'll happily grill sunfish (bluegill, bass, etc.) and crappie, but catfish is for frying. It's like Okra in that way. Some people boil it, but it ruins the texture.
