 DFH 60 min clone happening RIGHT NOW! (ok.. long done but still)

Grains have been steeped, hops weighed and ready. Bringing steeped water to a boil to add extract as I type.

ETA: Ok that was a nightmare. First of all the continual hopping required is hard to do when you have a beer, a chocolate shake, you have to stir AND you're always throwing in another pellet. Then this was also my first time using whole leaf hops for one of the additions. Everything during boil went well, but when it came time to run the wort through the counter-flow chiller and into the bucket things got ugly. Even though my BK has a spout on it, it clogged with the hops after about a gal. Then I moved to my racking cane which held up for another 3 gal or so. With a gal or two left in the BK I had to give up and pour the wort into the fermenting bucket uncooled. Fortunately it's 39 degrees outside so hopefully it cools itself quickly.

Then to top it all off I didn't smack the pack 2 hours ago so I'm waiting to pitch the yeast anyway.

Now, some boring pics!

Pre-boiling some water to sterilize the tubing and chiller,


20 min steep on the crystal malt.


Time to add the rest of the water!


Water added and brought to a boil, 9.5 lbs of extract added and working toward the final boil.


Continual hopping and stirring.


See, I really am constantly adding the hops.


After that is when things went south so no more pics. (Not that these were very exciting.)

very nice, my DFH 60 in in my keggerator right now, but my purge valve stuck open slighly and drained my c02 tank. I fear it may be lost...I went all grain with mine, it came out great!

And the fun continues. Left the wort (covered) outside to cool. Woke up on the couch around 2am realizing I needed to pitch the yeast still. Brought it inside......oh yeah, the thermometer is somewhere inside the bucket. After trying to retrieve it with a pair of unsanitized tongs, I ended up just reaching in to get it.

Pitched the yeast which seemed to go ok... did I take an OG? No. So I did my best to sanitize the hydro tube and dunked it in the wort. I'm sure I got a ton of yeast with the sample. Also the OG was supposed to be 1.070 and I think I was 1.062-4. Low but that was due to a little more water volume than I should have had.

"*SIGH*

I tasted the hydro sample though and WOW!!! The flavor profile is there for this to be really good if I didn't kill it. And yes, I know, Relax, don't worry.

Did you make a whirlpool?
Just stir in one direction for a minute or two to make a small whirlpool.Let it rest for about 10 to 20 minutes,this should help settle all of the trub and leave you with clear wort.

There should still be a layer of C02 on top of the beer. Aside from being flat, it should be alright.

i tried. Something is REALLY stuck in there. The answer is to replace it with a ball valve. I will.

I have a similar BK + CFC setup, I use 5 gal paint strainer bags for IPA hop additions. I clip the bag to the side of the BK with a binder clip.

Do you also dry hop this recipe, or is all the hopping done during the boil?

i dry hopped my all grain DFH 60 brew.


It calls for dry hopping. I'll be using bags for it.

So this is an example of how I want to modify my BK to deal with my issues. Anyone have an opinion? (wow, I'm really asking for it....)

Maybe try a false bottom over that as well.

I just tried (and failed) at a DFH 90 min a few weeks ago with a friend on his all grain set up. The mash tun wasn't big enough for the amount of grain, so the temps were way off, then we had a stuck sparge, then time ran away on us, so we only made it about 50 min into the 90 minutes of hopping, so we just dumped em in. It sat in secondary for about 12 days dry hopping and now has been in bottles for a bit over a week. Hoping it comes out tasty, but I doubt it will be a good clone.

It seems like a good idea to me. I'd certainly like to know how it works out if you try it.

I might suggest putting a coil of stiff wire inside the SS braid to keep it from collapsing, but I'm not sure if that's a real concern or not.

I would recommend either going with a hop stopper or a false bottom. Something with a pickup tube that goes to the bottom of your brew kettle. Otherwise, you're going to be leaving a lot of good wort behind. I have tried a similar screen to your picture and it ended up in my mash tun. It's great for mashing, not so much for boiling.

Interesting perspectives. It almost seems like most of the keggle setups have a false bottom with the dip tube as well. Maybe that is the direction need to work on. Also if I do this again it will either be with 100% pellet hops or.... well if I don't have pellet hops I'm not doing it again! I have the simcoe and warrior, the amarillo is the only one I need to come up with.

And yes, when I dry hop the other half the amarillo I'm definitely going to have a hop bag!

This is still sitting in primary. I dry hopped the day before thanksgivng and i really don't have the empties to bottle yet. Should i secondary to do a first round clean up of the whole hops mess i made? Or should I just leave it and man up and make some more empties?

I would secondary to try to get it a bit clearer. However, do you think you dry hopped it a bit too long? I usually seondary then dry hop in the secondary for about a week.

Ok so after having a portion of the beer primed and in a pressurized home draft bottle for a week its finally time to try it!

Carbonation was good, head was adequate, but i think the overly long dry hop time pushed the bitterness past my tolerance level. Im going to see how the rest of the 1.5 gals goes tonight before making a final call on it.
