I'm doing a Sasion de Noel for Xmas/New Years. I'm pushing the time on it but since I'm using a conical single-stage fermenter I should be ready to bottle in 3 weeks. Pictures will be posted tonight when I finish everything but my brew day started off with a stumble, my bazooka screen broke so I've had to ditch it; that will make my cooling efforts more difficult as I use my therminator so I'll have to take care with the trub.
Anyway, for the recipe...
All-Grain
Grain Bill:
10lbs Belgian Pils Malt
.5lbs Belgian Aromatic
.25lbs Carata III
.25lbs CaraAroma
1oz Magnum hops @ 60 min
.5oz Magnum hops @ 15 min
1lbs Corn sugar @ 60 min
1lb Dark Belgian Candi sugar @ 60 min
Yeast:
White Labs Belgian Sasion Ale Blend (WLP568)
or
White Labs Belgian Strong Ale (WLP545)

Ok guys here's the photos but a couple disclaimers. One, I'm brewing and taking photos so some of the more critical steps I couldn't capture since I was busy doing them. Also, the camera is a iPhone4 so not the greatest pics...

5: Chill (Due to my bazooka screen breaking I had to ditch my theminator due to trub blocking the flow, thankfully I still have my old immersion chiller.)

Did an apricot heff yesterday. It's bubbling pretty good in the primary right now.
Today is clean up day.

I am getting ready to put my very first batch together. I am making hard cider and following the EdWort's Apfelwein recipe. Instead of Red Star Montrachet I am using Wyeast 1318 London Ale III yeast on the recommendation of the guys at Austin Homebrew.
This is my first try so I am excited.

I have a triple thats fermenting right now. I need to rack to secondary.
The yeast cake is belgian strong ale. I am half tempted to copy your recipe and add it on top of the cake.
Didn't have time for the 8 hour brew session for a Pliny the Elder Clone, so I whipped up a batch of EdWort's Apfelwein in about 15 minutes!
