I’m looking for a few recipes for long hot and jalapeno peppers
What’s going on folks? I’ll be hosting a Memorial Day bbq and I’m looking for a few recipes for long hot and jalapeno peppers. Anyone have any good stuffed hot pepper recipes etc?
Thanks in advance folks,
Joe
Take a flank steak and put it in a cassrole dish.
Mix a healthy dose of Dales low sodium and lime juice and pour it over the steak
Chop onion, peppers, garlic and celantro and add to the dish along with some fajita seasoning
Cover and let sit overnight in the fridge.
The acids and salt will break the meat down and make it tender as hell.
Slap it on the grill and enjoy!

You could make a form of ABT's with good jalapenos. If they're for a family BBQ they'll be a big hit as they're great finger food.

Here's the recipe I use (for the most part). I skip the jam bit in the end as it's not needed.

A simple variation on this idea:
Halve a jalapeno lengthwise. Destem/remove seeds.
Add an equally porportional size of dove, chicken or duck in the hollow of the pepper. With the meat it's best if you marinate it overnight in a ziplock bag with a bottle of cheap Italian Wishbone dressing.
On the opposite side place a slice of portabella mushroom.
Wrap in half a slice of good bacon, bonus points for pepper bacon.
Secure with a toothpick.
Place on medium hot grill until the meat is cooked. Will take about 8-10 minutes.
There will be none of these left after the party I guarantee.
One thing I love to do with jalapenos:
Stuffed Jalapenos
1 lb. ground sausage, browned and drained of grease and cooled
1 8oz. cream cheese block, softened
12 nice sized jalapenos
1 package of bacon – regular thickness – thick slices do not work well for this
Once sausage has cooled off a bit, mix with cream cheese – I just use a spoon and incorporate it together – no need for a mixer. Slice jalapenos longways and clean out and de-seed. Evenly stuff sausage/cream cheese mixture in the 24 halves of jalapenos. Now you will need to cut your slices of bacon in half and wrap a half slice of bacon around each stuffed jalapeno. You can secure with a toothpick if needed. I have always baked them in a 350 degree oven till bacon is done, but you could also grill them. These are great and always a crowd pleaser. I never take any home afterwards cause the plate is always empty!
Thanks guys! Looks like I'll be trying a few recipes on Memorial Day...
I just made my second batch of the ABT's, great! You can also stuff the Jalapenos with a pineapple cream cheese/crawdad tail (or crab/lobster) mix and wrap in bacon. We like them stuffed and wrapped with any of the thin sliced Italian hams too.
