Do you think I can use lamb chops instead? What about using raspberries instead of cherries?
Sure you can. Raspberries will work also.
I ended up using lamb chops and a bag of frozen cherries. The meal turned out great except that I only bought one package of chops which only contained four really small chops. The glaze and sauce took a really, REALLY long time to reduce. After double the time listed it was still a little too runny but it tasted good anyways.
Overall, it was a successful dinner.
