i eat at panera bread co. situated just next door to

where i work, and i love the food. but spend too much

money there. so i would like to know how to cook there

baked soufflé's . can some one help me out

Panera Ham & Swiss Baked Egg Soufle

Here is FagDoll's recipe.

Souffle:

Butter and finely grated parm for mold

3 tbsp butter

3 tbsp flour

1 c whole milk

4 egg yolks

Nutmeg

3/4-1 c cheese (I like gruyere)

5 egg whites

Salt and pepper

Preheat oven to 400. I use a 7 inch corningwear dish, but you can go out and buy an actual mold if you want. Butter the dish and sprinkle to coat with parm. This helps the souffle climb. Make a bechemel from the flour butter and milk. Melt the butter and stir in flour cooking over med heat for a few minutes, stirring constantly. Whisk in the milk and a pinch nutmeg And salt and pepper (I like dried mustard powder too for a cheese souffle) bring to boil and cook for one minutes, remove from heat. Whisk the yolks in a small bowl and temper by adding small amounts of the bechemel until eggs are warm. Whisk into sauce. Beat the egg whites and a pinch of salt until stiff. Add the cheese to the bechemel. Stir about 1/4 of the egg whites into the bechemel. Then, fold the remainder in gently. Pour mix into prepared mold. You can top with a sprinkling of cheese if you like. Place in oven and drop heat to 375.

DO NOT OPEN THAT DOOR FOR AT LEAST 25 MINUTES! DON'T DO IT!

Cook for 25-30 min until center is set. Serve immediately.

Spinach variation:

Add a little chopped onion to the butter in the bechemel and cook before adding flour. Reduce cheese to 1/2 c and add 1/2 c chopped drained spinach.
