 Sheep and goat DIY butchering

These are what me and my 2 roommates are wanting to smoke. To do this, we'd probably just buy the animal off craigslist and butcher ourselves.

Anybody ever smoked a sheep or a goat to know if it's tasty? Ages to stay under? How much meat can I expect from one? We've done deer, duck, squirrel, rabbit, dove, quail etc etc but never a goat or a sheep. I'm thinking do a roast wrapped in bacon with a rub of salt and pepper with rosemary maybe

Tips?

you don't want a sheep. try and get a goat that's under 5 years old. that way he'll be nice and tender.

We would pick the youngest goat. 5 may be too old and gamey.

BBQ'd a couple over mesquite, but never smoked one. Soak that meat for 24 hours in buttermilk and you will have a better outcome.

We have a goat farm down the road and I saw their meats in the local store freezer section. OMG they're proud of that stuff pricewise.

Nothing wrong with sheep...you just want to cut and wipe all the tallow off with vinegar and lemon juice before you start cooking. Lambs are better, but I've done some old ewes that were great. I luvs me some BBQ Mutton!!

Goats eat good...if'n they ain't red.....I ain't eatin' no red goats.

If you're going to smoke a goat, it needs to be young. I'd suggest BBQing one instead of smoking.

Absolutely. When they get older, it's hard to find big enough rolling papers.

Absolutely. When they get older, it's hard to find big enough rolling papers.

When butchering out a goat, have a shower and a change of clothes ready. Put your butchering clothes in the washer immediately.

They smell bad.

Don't worry TRG, not only do you smell bad, you are too old.
