I always add pork to my beef chilli and was wondering if it would be OK to do it with axis meat. Any good recipies out there? Axis is very,very lean,would pork be a good flavor enhancer? Show me some recipies guys!

Good to know. I should also add that this is the rear quarter. I'm thinking that maybe a pound or two added to six pounds of axis should be a good ratio.
I did about one to five, should be able to get the fat cheap from a butcher.
