 Anyone have a good recipe for sweet rolls? (Roadhouse style)

Every recipe I've ever found has not lived up to the hype. Not even close.

This is what I found, but I haven't tried it yet.

Texas Roadhouse ® Sweet Yeast Rolls
.
1/2 solid cake of yeast or 1 pkg of active dry yeast
1/2 cup warm water
2 cups milk
1/2 cup sugar
2 quarts all purpose flour
2 TBS melted butter
2 whole eggs
2 tsp salt

Directions:
Soften yeast in warm water with a teaspoon of sugar. Scald milk; cool to lukewarm. Add yeast, sugar and enough flour to make medium batter. Beat thoroughly. Let stand until light and foamy. Add melted butter (which has been cooled), eggs, and salt. Beat well. Add enough flour to form soft dough. Sprinkle small amount of flour on counter and let dough rest. Meanwhile, clean and dry bowl; grease clean surface of bowl. Knead dough until smooth and satiny. Put in greased bowl; turn over to grease top. Cover, let rise in warm place until double in bulk. Punch down. Turn out on floured board. Divide into portions for shaping; let rest 10 minutes. Shape dough into desired forms. Place on greased baking sheets. Let rise until doubled. Bake at 375 degrees for 10 minutes; reduce temperature to 350 degrees for 10 to 15 minutes more. Cool on rack. Makes 5 to 6 dozen.

Like Texas Roadhouse Cinnamon Butter
1/2 cup Butter
1/2 cup Powdered Sugar
1/2 cup Honey
1 tsp Cinnamon
Blend all ingredients at room temp.

FWIW, most of the flavor comes from the butter they serve.
Have you watched them make the rolls at Texas Roadhouse? Roll out a big pan of dough, cut it up, bake it, serve.
So I'm pretty sure its the butter, IMHO.

Sorry. An outside company makes the "mix" for them nowadays.

There used to be a recipe but he doesn't remember it. I doubt he ever mixed it himself anyway.

My Great Aunt, an eastern European immigrant, made what she called Schneckin –– translates to snails because they are curled up line snails –– but when she dies I was too young to ask for a recipe. I finally found a recipe attributed to her but it just wasn't the same, so the experimentation began. I researched and tinkered and THIS my friend is the be all, end all and it IS a ton of work but worth it in the end.

Aunt Ray, this is in your honor!

MY Schnechen

1TInstant yeast
50gLuke Warm Water
200gsour cream
3eggs
500gFlour ( UP TO 600 g. This will be a sticky dough don’t add too
much)
60gsugar or Vanilla Sugar
Pinch Salt
225gButter

Dissolve the yeast in the water. Add sour cream and eggs and mix well. Add all dry ingredients, reserving about a quarter of the flour for later additions, and butter into food processor and pulse 10 times to cut butter into flour. Add the dry ingredients and kneed. Add reserved flour as needed to for a workable dough remembering to keep the dough on the sticky side. Place the dough in an oiled food storage bag and place in refrigerator over night.

Preheat oven to 350 degrees F.

350gpacked brown sugar
225 gbutter
75 ghoney
55 gTennessee whiskey
150gchopped pecans

Butter a 13 by 9-inch baking pan. Combine sugar, butter, and honey in small saucepan. Bring to boil over medium heat, stirring to melt sugar well. Add whiskey. Boil for 1 minute stirring continuously. Remove from heat and stir in pecans. Pour in baking pan.

1 Tmelted butter
1/3Cpacked brown sugar
1 tground cinnamon
¼tground cloves
¼ tground allspice
¼ tground nutmeg
1CRaisins
1Cpecan pieces

The truth is, I generously coat the rolled out dough with room temperature butter, generously sprinkle dark brown sugar, dust with a good quality cinnamon and the spread on raisins and pecans to suit my eye.

Roll dough into a 12 by 16-inch rectangle. Brush with melted butter. Combine sugar and spices in small bowl. Sprinkle over dough. Sprinkle pecans and raisins over dough. Roll dough from long side, pressing to seal edges. Cut into 8 slices and place cut side down in baking dish. Cover with plastic wrap. Place in unheated oven with pan/bowl of hot water and allow to rise until doubled, about 1 hour. Remove plastic wrap.
Bake for 20 to 30 minutes until buns are golden and syrup is bubbly. Cool in pan for 5 minutes. Invert onto foil covered baking sheet. Serve warm.

If you are looking to get your hands covered in flour then this will not help. However, this brand of frozen dinner roll is very much like the meth rolls they serve at Texas Roadhouse or Logan's Roadhouse restaurants. While they are baking, mix up some real butter with some honey and sugar added to it. After they come out cover them generously in the butter/sugar mixture. Try not to eat them all at once.

This recipe makes some pretty soft rolls. I usually do the whole thing in the bread maker.
Ingredients

1 cup warm water
2 tablespoons soft butter
1 egg
3 1/4 cups bread flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons active dry yeast

Directions

Place all ingredients in bread machine in the order according to manufacturers directions.
Select dough cycle.
When cycle is complete, remove dough from pan.
Cover and let rest for 10 minutes on lightly floured surface.
Grease a large cookie sheet.
Divide dough into four parts, then cut each part into 5 pieces.
Shape each piece into a ball and place 2" apart on cookie sheet.
Cover and let rise for 30 minutes or until double in size.
Heat oven to 375° and bake for 12 to 15 minutes or until golden brown.
Remove from oven and brush tops with melted butter.
Serve warm or cool on wire rack.
Notes: Do not use delay cycle on your bread machine.
For rolls with soft sides, place rolls close together on cookie sheet and let rise.

Not sure what but they didn't rise alot and were not soft and fluffy.

Wrong yeast. Dead yeast. Yeast not properly activated. I used to fuck this up regularly and thought bread making was tough. I saw them making dough on TV a few times and that was all it took.
