They can be a little much by themselves, but mix them in tastefully with Harmonic Minor and even Harmonic Major, along with regular Natural Minor and Major scales.

The Major augmented 5th chord/arpeggio is a good way to transition from Harmonic Minor into Hungarian Minor for example. Play around with it, your ear will lead you.

A few scales I found in some guitar mags:

Japanese (1-flat2-4-5-flat6)

Kokinjoshi (1-flat2-4-5-flat7)

Iwato (1-flat2-4-flat5-flat7)

Balinese Pelog (1-flat2-flat3-5-flat6)

Hirajoshi (1-2-flat3-5-flat6)

Double Harmonic (1-flat2-3-4-5-flat6-7)

Hungarian Major (1-sharp2-3-sharp4-5-6-7)

Hungarian Minor (1-2-flat3-sharp4-5-flat6-7)

Persian scale (1-flat2-3-4-flat5-flat6-7)

There are also a ton of scales in this book: http://guitargrimoire.com/

To really get that middle eastern oud sound you'll have to go fretless or get really good at string bending. Lots of not quite a half step notes there.
